Ingredients
• beer bratwurst, split down the middle lengthwise
• sauerkraut, drained of excess liquid
• sweet corn, red pepper OR sweet relish
• Spicy mustard
• Fresh Dill
• havarti or swiss cheese
• red onion sliced thin
• onion rye bread
Preparation
Preheat grill pan to medium high. Split bratwurst down the middle to butterfly them, place on the grill and cook until heated through. Press them down while they cook so they don’t curl up.
While the bratwurst are cooking, combine the sauerkraut and relish in a bowl and fresh dill. Lightly butter the bread on one side then Spread both slices of bread on other side with a little mustard and top with a slice of cheese on mustard side. Top the cheese with a grilled bratwurst, some of the relish/sauerkraut mixture, slice of red onion, then another slice of cheese and the other slice of bread mustard side down. Place back on the skillet. Pressing it down with a spatula or grill press till bread is nice an brown.
Enjoy! I did not state how much of each to use as I feel this is up to the preparers choice. I used 1 Bratwurst per sandwich and heavy on sauerkraut mixture per my taste. And of course I had mine with wine, but I suppose a beer would be more traditional.
