spice is life, lol. well actually it is said to improve everything from digestion to metabolism, but here it just changes that boring old chicken weekly staple and turns it up a notch to something a little more exotic. so go ahead and turn up the heat and try this easy spicy chicken stir fry.
Ingredients
- 8 ounces pineapple
1/3 C. soy sauce
1/3 C. molasses
3 TBLS malt vinegar
1 TBLS ketchup
1 TBLS sriracha ( add more for extra heat)
2 cloves crushed garlic
1/2 tsp grated ginger
2 pounds chicken, cutup into one inch cubes
3 TBLS vegetable oil
optional add some red pepper flakes
Instructions (Serves 4)
In blender pure the pineapple, then Add the soy sauce, molasses, vinegar, ketchup, sriracha, garlic, ginger, and mix ingredients well. Coat chicken with marinade, leaving in refrigerator for about six hours.
In large sauté pan heat oil until very hot. Place marinated chicken in the pan, fry for about 15 minutes until chicken is well done. Marinade will be reduced to a caramelized coating on the chicken. Do not overcrowd the pan, so do this in batches. Use leftover marinade, de-glaze the pain with it and reduce to thick sauce. Serve overlazed chi steamed rice.
