So I have been eating Keto now for a few months and even before Keto I tried to not eat bread. But I absolutely LOVE LOVE LOVE bread. I mean nothing is better than a crunchy piece of toast smothered in butter to make your day just right and have all those feel good emotions that come with carbs. I was delighted that on Keto there are different recipes for low carb bread choices and I have been trying out different ones along the way and have been disappointed. Although I do have to say they have been better than not having anything at all. I mean how the heck do you have an egg sandwich without bread?
Upon waking this morning, I was trying to figure out what I was going to have for breakfast and pretty much sick and tired of eggs and bacon. Can you believe that? As I was scrolling thru facebook I came across “The best Keto bread recipe” so I clicked on it to see if it was the same one with mozzarella cheese in it. I then saw a picture of a piece of buttery toast and I knew I had to try this recipe out this morning because now all I wanted was that crunchy buttery toast. So I took my computer to the kitchen, recipe showing and got out the food processor and within a few minutes had all the ingredients put together. Well all but the cream of tartar as I did not have any. I substituted for a little extra baking powder.
Now the recipe I had said the dough should be lumpy and thicker kind of, but mine came out more like a cake batter consistency.

o while I write this, it is baking away in the oven and smelling pretty delish so far. So here is the recipe from Keto connect for ” The best keto bread recipe on the internet”
Ingredients:
1 1/2 cup almond flour
6 large eggs seperated
4 tblsp butter melted
3 tsp baking powder
1/4 tsp cream of tartar
a pinch of salt
- preheat oven 375
- separate eggs from the whites, add cream of tartar to whites and beat until soft peaks form.
- add remaining ingredients to food processor and 1/3 of the beaten egg whites. ( add 6 drops liquid stevia to help with the egg taste) I forgot to do that lol Mix until combined. This will be a lumpy mixture.
- add the other 2/3 egg whites gently process taking care not to over process , this is what gives bread the volume
- pour into buttered 8 x 4 loaf pan and bake for 30 minutes. test with tooth pick to ensure cooked thru. This will make 20 slices.

So here is a picture of the bread just out of the oven and I do have to say it is no where near the size of the pictures from ketoconnect. So a little disappointed about that and wonder if it because I did not add the cream of tartar. However it looks and smells wonderful and I am crisping up a couple pieces in the toaster oven to slather with butter.
So in conclusion, not too bad. Does have an egg flavor to it and even though toasted was not crispy on the inside, more melt in your mouth, however did not feel like I was eating egg. So I will try this again in the future and make some adjustments. I hope you all give it a try and post your outcomes. In the meantime, here is to eating healthy and making better choices and nothing ever beats baking in the morning on a drizzly day.
