Ok, I have messed up before but seriously? Was in the mood for a good tri tip, already marinated from the store. Mouth was hoping for that slim sliced, melt in your mouth, perfect pink meat that we just BBQ to perfection. With some crispy BBQ potato and salad with ranch dressing of course to top our night off. Since I usually wrap the tri tip in foil when I BBQ so it doesn’t end up too burnt on the outside, I suggest this time we use the BBQ mat that my momma so graciously gave us at some point and we had not used until recently when we BBQ the veal burgers. Let me tell you dynamite. The burgers (so check out the recipe here on the blog) and the mat (you have got to get yourself one).
Anyway, my boyfriend was thinking this isn’t cooking quite like tri tip, but didn’t say anything and then I was slicing it thin against the grain and going wait a minute this isn’t tri tip. Plated up everything and then took a bite and we all went corned beef? lol Dang talk about really being surprised, but pleasantly. The potato and salad were of course a perfect pare as well and we would of never thought to BBQ corned beef, but it ended up just as good if not better (easier) than what I normally would do and that is pressure cook it. So for all of you who are cooking that St. Patricks day favorite tomorrow, I say let the BBQ get you out of the kitchen and into this wonderful weather. Now all we need is a Guinness. Happy St. Patricks day early and enjoy our mistake was a learning experience to share.
